Yum! Vietnamese vermicelli noodles with barbecue chicken and egg rolls. A treat I rarely get to have. =) I like how there is a nice contrast between flavors and textures in this dish. The salty and sweet dipping sauce goes nicely with savory chicken and egg rolls. Also, the crunchiness of the egg rolls, peanuts, bean sprouts, and refreshing sliced cucumbers pairs nicely with the soft vermicelli noodles. The bonus is that the bean sprout roots were picked off. I don’t think most places do this.
